Chicken and Chard Chili

Ingredients
- 2-3 T olive oil
- 1 medium onion chopped
- 3 cloves garlic crushed
- 1-2 jalapeno peppers seeded and finely diced
- 2 organic chicken breasts chopped into small pieces
- 1 T ground cumin
- 1 T mild chili powder
- 1 t smoked paprika
- 2 c tomato sauce
- 3 c water
- 5-6 c cooked pinto or red beans
- 2 t Herbamare or 1 t sea salt or to taste
- 2 c chopped chard
Instructions

Heat a 6 qt. pot over medium heat. Add the olive oil, then add onions, sauté for 5-10 minutes or until onions are soft.

Add crushed garlic, jalapeno peppers and chicken; sauté for 2-3 minutes more.

Add cumin, chili powder and smoked paprika. Saute a minute more.

Add tomato sauce, water, beans and Herbamare. Stir, cover, simmer on medium-low heat for 45-60 minutes.

Once the chicken is very tender and the flavors have melded, add chard and simmer for 5 minutes more. Turn off heat, taste, adjust salt and seasonings if necessary.
Recipe Notes
Tip: cover your hands with olive oil prior to handling peppers, this will protect your hands from the burn. Or wear gloves if you have them.
